Caponata Pasta RECIPE (V)

Ingredients

4 tbsp. olive oil
1 chopped onion
4 crushed garlic cloves
Peppers, artichokes and tomatoes that have already been roasted in olive oil
400g can chopped tomatoes
2 tbsp. raisins
350g penne
Parmesan to serve
Method
  1. Heat the oil in a large pan and cook the onion for around 10 mins until the onions are starting to caramelise and add the garlic for the final two mins of cooking. 
  2. Add the vegetables, tomatoes and raisins and simmer for about 10 mins, until the sauce is thick and rich. 
  3. Cook the pasta according to instructions (we don’t use salt) and drain, reserving a little bit of the water. 
  4. Pour the pasta into the sauce with the little leftover water and serve!
  5. Grate cover some Parmesan if you fancy!
