West Indian Lamb Curry Recipe

Ingredients
1 chopped onion
10 crushed garlic cloves
100g chopped ginger
100ml vegetable oil
4 tbsp. mild curry powder
3 thyme sprigs
400g chopped tomatoes
300ml vegetable stock
Can of black-eyed beans
Method
- Place the onion, garlic and ginger into a food processor and blend into a puree.
- Heat the oil in a large pan and add the onion mixture and cook for 5 mins until softened.
- Add the thyme and curry powder and cook for a few mins until fragrant.
- Add the lamb to the pan and cook for 5 mins until the meat has browned. Add the tomatoes and the stock and bring to the boil and cook for 10 mins.
- Reduce the heat and cover and leave to simmer for around 2 ½ hours, removing the lid for the last 30 mins of cooking.
- Add the beans to the curry and heat through. After 5 mins, remove from the heat and stir well.
- Serve!
We serve a halal version of this dish.
